Kentucky Spoonbread (Soft, Savory Side Dish)

Light, fluffy, and somewhere between cornbread and a soufflé... Kentucky spoonbread is one of those old-fashioned Southern recipes that never goes out of style.


It's soft enough to serve with a spoon, buttery, comforting, and perfect alongside fried chicken, ham, barbecue, or just about any Sunday dinner.


The best part? It comes together with simple pantry ingredients and puffs up beautifully in the oven. Just be sure to serve it warm... that's when it's at its absolute best.


Kentucky spoonbread baked until golden brown in a rustic baking dish with a soft, custardy center served with a wooden spoon.

Ingredients

  • 1 cup milk

  • 1 cup water

  • 1 cup cornmeal

  • 2 tbsp butter

  • 1 tsp salt

  • 3 eggs, separated

  • 1 tsp baking powder


Instructions

  1. Heat oven to 375°F; butter a baking dish.

  2. Simmer milk + water; whisk in cornmeal; cook 3–4 minutes until thick.

  3. Stir in butter and salt; cool 5 minutes; whisk in yolks and baking powder.

  4. Beat whites to soft peaks; fold in.

  5. Bake 30–35 minutes until puffed and golden.


Kentucky Tip

Serve immediately. Spoonbread is best hot and airy.
