Simple, Fresh, and Perfect for Real Life


Why I Love This Bowl


This is one of those dinners that just works.


Warm rice.

Seasoned chicken.

Fresh vegetables.

Everything in one bowl.

Nothing fancy.

Nothing complicated.Just food that feels good and comes together without stress.


It’s also one of my favorite ways to feed a family.


Set everything out… everyone builds their own… and I’m not making three different dinners.

Ingredients

(Serves 2–3)


  • Cooked rice (white or brown)

  • Chicken breasts, cooked and sliced

  • Oregano

  • Cherry tomatoes, halved

  • Cucumbers, sliced

  • Roasted peppers

  • Roasted sweet potatoes or regular potatoes


Optional Toppings


  • Feta cheese

  • Kalamata olives

  • Red onion, thinly sliced

  • Olive oil

  • Salt + pepper

  • Fresh lemon


How to Make It


  1. Cook your rice and set aside.

  2. Season chicken with olive oil, oregano, salt, and pepper.

    Cook in a skillet or grill pan, then slice.

  3. Roast your peppers (or use jarred… no judgment).

  4. Roast potatoes until tender and slightly crispy.

  5. Set everything out and build your bowls.

  6. Finish with feta, olives, olive oil, and a squeeze of lemon.


Real Life Tips


  • Use whatever grain you have… rice, quinoa, couscous

  • Chicken thighs work great too

  • Add hummus or tzatziki if you want it creamier

  • Throw in greens if you have them


And yes… I add onions to mine. Everyone else passes 😂


How to Serve It


This is a “set it out and let everyone build” kind of dinner.


Easy.

Flexible.


And somehow everyone gets exactly what they want.
