This is one of my family's favorite dinners.
I love it because it's healthy, easy to make, and everyone gets exactly what they want. I simply cook the chicken, roast a few vegetables, make some rice, and let everyone build their own bowl.
It's colorful, fresh, filling... and somehow there are never any complaints.
That's a win in my book.

How to Make a Mediterranean Chicken Bowl
1. Cook the rice.
Prepare your favorite rice according to the package directions.
2. Cook the chicken.
Season the chicken with olive oil, oregano, salt, and pepper.
Cook in a skillet or on the grill until fully cooked.
Slice before serving.
3. Roast the vegetables.
Roast the potatoes until they're golden and tender.
If you're using fresh peppers, roast those too. Jarred roasted peppers work great if you're short on time.
4. Build the bowls.
Start with a layer of rice.
Top with sliced chicken, tomatoes, cucumbers, roasted peppers, and potatoes.
Finish with feta, olives, a drizzle of olive oil, and a squeeze of fresh lemon.
Make It Your Own
Swap the rice for quinoa or couscous.
Use chicken thighs instead of breasts.
Add spinach or mixed greens.
Include hummus or tzatziki for extra flavor.
Add avocado for a creamy twist.
Storage & Leftovers
Store everything separately in airtight containers for up to 4 days.
Build fresh bowls throughout the week for quick lunches or easy dinners.
