Why I Love This Bowl


This is one of those dinners that works for real life. Warm rice, well-seasoned chicken, fresh vegetables, and a few toppings pulled together in one bowl. Nothing fancy. Nothing complicated. Just food that feels good and comes together without stress.


It’s also one of my favorite ways to feed a family. Everything gets set out, everyone builds their own bowl, and I don’t have to make multiple dinners or overthink it.

What I Used to Make This Bowl


Ingredients You’ll Need


This recipe serves 2 to 3 people and uses straightforward ingredients that are easy to find and easy to swap.


  • Cooked rice (white or brown)

  • Chicken breasts, cooked and sliced

  • Oregano

  • Cherry tomatoes, halved

  • Cucumbers, sliced

  • Roasted peppers

  • Roasted sweet potatoes or regular potatoes (or both)


Optional Toppings


  • Feta cheese

  • Kalamata olives

  • Sliced tomatoes

  • Sliced cucumbers

  • Thinly sliced red onion

  • Olive oil

  • Salt and pepper

  • A squeeze of lemon


How I Make It


Cook your rice according to package directions and set aside.


Season the chicken with olive oil, oregano, salt, and pepper. Cook it in a skillet or grill pan until cooked through, then slice.


Roast the peppers on a sheet pan, or use jarred peppers if that’s what you have… no judgment here.


Cut and roast the sweet potatoes or regular potatoes until tender and lightly browned.


Set everything out in bowls and let everyone build their own.


Finish with feta, olives, a drizzle of olive oil, and a squeeze of lemon.


And yes… I add onions to mine. Everyone else politely declines.
