Boil the Potatoes:
Place peeled, chopped potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–18 minutes.

Drain & Mash:
Drain the potatoes well and return them to the warm pot. Mash to your preferred consistency.

Brown the Butter:
In a small skillet, melt the butter over medium heat. Continue cooking until it turns golden brown and smells nutty, 3–5 minutes. Add sage leaves during the last minute for extra flavor.

Combine:
Pour the brown butter (remove sage leaves if you prefer) over the mashed potatoes. Add warm milk or cream until they reach your desired level of creaminess.

Stir well and season generously with salt and black pepper. Taste and adjust as needed.
