Buffalo Chicken Dip

This buffalo chicken dip is one of those recipes people hover around.


It’s creamy, a little spicy, and always disappears faster than you expect. I make it for get-togethers, game nights, and those random evenings when we want something warm and easy without a lot of effort.


I love this one because it’s forgiving and low-stress. You don’t have to measure perfectly, you can adjust the heat to your liking, and it works just as well for a crowd as it does for a quiet night at home. Serve it hot with whatever you have on hand and call it done.

Why I Keep Making This Dip


This is one of those recipes that never fails.


It comes together quickly, bakes in one dish, and everyone knows exactly what it is the moment it hits the table. Creamy, cheesy, and just spicy enough to keep you going back for another bite.


It’s also easy to tweak depending on who you’re feeding… more buffalo sauce if you like heat, extra cheese if you don’t. No rules, just comfort food.


What I Used to Make This Dip


This dip comes together with a few kitchen staples I always have on hand.

These are the tools I reach for most often when making warm dips and easy appetizers.


Ingredients


  • 2 cups cooked chicken, shredded(rotisserie chicken works great)

  • 8 oz cream cheese, softened

  • 1 small bottle ranch dressing

  • 1 small bottle Frank’s RedHot sauce

  • 1½ cups shredded cheddar or mozzarella cheese

  • 1–2 cloves garlic, minced

  • ¼ cup sliced green onions and blue cheese crumbles, for topping


I usually use a full small bottle of ranch and a small bottle of Frank’s, then adjust to taste. This dip is very forgiving, so don’t stress exact measurements.


How I Make It


  1. Preheat your oven to 350°F.

  2. In a mixing bowl, combine the softened cream cheese, ranch dressing, buffalo sauce, and minced garlic. Mix until smooth and creamy. A hand mixer makes this easy, but a sturdy spatula works just fine too.

  3. Stir in the chicken and 1 cup of the shredded cheese.

  4. Spread the mixture into a small baking dish and sprinkle the remaining cheese evenly over the top.

  5. Bake for 20–25 minutes, until bubbly and warmed through.

  6. Let it cool just slightly, then top with green onions and blue cheese crumbles before serving.


How to Serve Buffalo Chicken Dip


  • tortilla chips for the classic option

  • celery, carrots, or bell peppers for crunch

  • sliced baguette or pita chips

  • crackers… whatever you already have works

Make-Ahead Tips


You can mix everything together ahead of time and keep it covered in the fridge. When you’re ready to serve, bake it straight from the fridge and add a few extra minutes to the cook time.


This makes it especially easy if you’re hosting and want one less thing to think about.
