These Honey Butter Roasted Carrots are one of those sides that look pretty on the table but couldn’t be easier. They’re sweet, caramelized around the edges, and the honey + butter combo just works. I make these every holiday because everyone actually eats them and they go with turkey, ham, or whatever else you’re serving.

Angela’s Recipe Tips
* Add extra honey: If you prefer a sweeter taste, drizzle a little more honey over the carrots after roasting.
* Try baby carrots: They offer a more tender texture and don't require peeling. Simply give them a wash and slice larger ones in half.
* A squeeze of lemon: Just before serving, a splash of lemon juice brightens the sweetness and balances the dish perfectly.
* Reheats well for leftovers.

Preheat oven to 425°F.

Prepare your carrots by peeling and slicing them into uniform pieces. This ensures that they cook evenly.

Toss the carrots in a large bowl with melted butter, honey, salt, and black pepper. Make sure every slice is evenly coated for the best flavor.

Spread the carrots out in a single layer on a baking sheet.

Roast in the oven for 30 to 35 minutes, tossing them halfway through.

2 lbs carrots: Peeled and sliced into equal pieces for even cooking.
3 Tbsp melted unsalted butter
2 Tbsp honey
¼ tsp black pepper
½ tsp salt
