Salted Caramel Apple Pie Cookies

If apple pie and a soft bakery cookie teamed up, this would be the result… and honestly? I might like this version better. These Salted Caramel Apple Pie Cookies are big, cozy, a little extra (in the best way), and exactly what I want when the weather turns chilly.


You get a warm cinnamon cookie base, sweet apple pie filling on top, and then that salted caramel drizzle that makes the whole thing taste like you’re eating dessert at a fall festival. They’re fun, pretty, and absolutely perfect for holidays, teacher treats, parities, or just a night when you’re craving something cozy.


Ingredients for the Salted Carmel Apple Pie Cookies


For the Cinnamon Cookie Base

  • ¾ cup unsalted butter, softened

  • 1 cup brown sugar

  • ¼ cup granulated sugar

  • 1 egg

  • 1 egg yolk

  • 2 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ½ tsp salt


For the Apple Pie Topping

  • 2 medium apples, peeled + diced (Honeycrisp or Fuji)

  • 2 tbsp butter

  • 2 tbsp brown sugar

  • 1 tsp cinnamon

  • 1 tsp lemon juice

  • 1 tsp cornstarch + 1 tbsp water (optional, for thickening)


For the Salted Caramel Drizzle

  • ½ cup caramel sauce (store-bought or homemade)

  • Pinch of flaky sea salt


Instructions


Step 1: Make the Apple Pie Filling

In a small pan, melt the butter.Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook until the apples soften and the mixture becomes syrupy...about 6–8 minutes.If you want it thicker, stir in the cornstarch slurry and simmer another minute.Let cool.


Step 2: Make the Cookie Dough

Cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add the egg, egg yolk, and vanilla. Mix again.


Whisk the flour, baking soda, cinnamon, nutmeg, and salt. Fold dry ingredients into the wet ingredients just until combined.


Chill dough 20–30 minutes for big, bakery-style cookies.


Step 3: Shape & Bake

Preheat oven to 350°F. Scoop large balls of dough (¼ cup size). Gently flatten the tops to make a shallow “well.”


Bake 10–12 minutes, until the edges are golden but the centers are soft.


Step 4: Assemble the Cookies

While still warm, spoon a tablespoon of apple pie filling onto the center of each cookie.Warm your caramel sauce and drizzle it right over the top .Add a pinch of flaky salt if you’re feeling fancy.


Step 5: Enjoy Warm

The first warm bite? That’s the “oh my gosh, these are amazing” moment.

  • Bake them slightly under for a soft Crumbl-style cookie.

  • Use Honeycrisp apples for the best flavor.

  • Chill the dough for thicker cookies.
