Strawberries & Mascarpone Cream

Updated: 6 days ago

Sometimes you just want a little something sweet after dinner...

Not a big slice of cake or a complicated dessert. Just something light, fresh, and easy to pull together.

This Strawberries & Mascarpone Cream is one of my favorite desserts because it feels a little fancy without taking much effort. Creamy mascarpone, sweet strawberries, and just a touch of vanilla come together in minutes.

It's beautiful enough for Valentine's Day, date night, or dinner with friends, but simple enough to make on an ordinary Tuesday.

Why You'll Love This Recipe

  • Ready in about 10 minutes.

  • No baking required.

  • Light, creamy, and fresh.

  • Perfect for entertaining or date night.

  • Easy to customize with your favorite toppings.

Fresh strawberries layered with creamy mascarpone in clear dessert glasses on a white quartz countertop in a cozy home kitchen.

Ingredients

Before you start, gather these simple ingredients.

  • 8 ounces mascarpone cheese, softened

  • ¼ cup powdered sugar (or to taste)

  • 1 teaspoon vanilla extract

  • 2–3 cups fresh strawberries, sliced

Optional Toppings

  • Honey

  • Lemon zest

  • Fresh mint

  • Crushed shortbread cookies

  • Graham cracker crumbs

  • Strawberry jam

How to Make Strawberries & Mascarpone Cream

1. Make the mascarpone cream.

In a medium bowl, gently whisk together the mascarpone, powdered sugar, and vanilla until smooth.

If you'd like a softer texture, stir in a splash of heavy cream or milk.

2. Prepare the strawberries.

Wash and slice the strawberries.

If they aren't very sweet, toss them with a teaspoon of sugar and let them sit for about 5 minutes to release their juices.

3. Assemble.

Spoon the mascarpone cream into small dessert glasses or bowls.

Top with fresh strawberries.

Repeat the layers if you'd like a taller dessert.

4. Chill (optional).

Serve immediately, or refrigerate for 20–30 minutes for a slightly firmer texture.

Make It Your Own

  • Add fresh blueberries or raspberries.

  • Drizzle with honey.

  • Sprinkle with lemon zest.

  • Top with crushed shortbread cookies for a little crunch.

  • Add a spoonful of strawberry jam between the layers.

Storage & Leftovers

Store the mascarpone cream and strawberries separately in the refrigerator for up to 2 days.

Assemble just before serving for the freshest texture.

A Few Questions You Might Have

Can I make this ahead of time?

Yes! Prepare the mascarpone cream ahead of time and refrigerate it until you're ready to serve.

What's the difference between mascarpone and cream cheese?

Mascarpone is richer, smoother, and less tangy than cream cheese, making it perfect for simple desserts like this.

Can I use frozen strawberries?

Fresh strawberries are best, but thawed frozen berries will work if that's what you have.

What should I serve this in?

Small dessert glasses, coupe glasses, ramekins, or even simple bowls all work beautifully.

A Few Final Thoughts

This is one of those desserts that proves simple can still feel special.

Fresh strawberries, creamy mascarpone, and just a hint of vanilla come together in a dessert that's elegant enough for company but easy enough to make any night of the week.
